Wednesday the 2nd.

Had a decent day.

Quinn started it by eating a small apple when he got up, then realizing that that was a bad thing. A medium apple is 17 carbs, so we're calling the one he ate a 15.  Not a fun way to start the day's count.

Breakfast was spinach eggs with cheese and a couple slices of bacon. Lunch was Atkins power bars (2 net carbs each) at the library, then when we got home I fixed Q a salad with tuna. I had been munching on almonds and cheese and didn't want the salad.

So, before dinner, Quinn was at 17 carbs and I was at 6.

Dinner was a broccoli, shrimp and chicken stir fry...absolutely amazing.

____________
Stir Fry (6 net carbs per serving)
Fry together in olive oil:
1 large chicken breast, chopped
1 lb broccoli florets
1 tsp red pepper flakes

then cook
1/2 cup raw shrimp
1 Tablespoon butter
until thoroughly pink. Add to the fried goodness of broccoli and chicken.

Add salt and pepper to taste.

Dipping Sauce;
2 tablespoons mayonaise.
2 tsp ranch dressing
1/2 tsp soy sauce
1/2 tsp cyanne pepper
1/2 tsp salt.

After dinner I had more almonds, (4 more carbs) then we ended up meeting some friends late this evening at a chinese restaurant. Had beef and veggies. The sauce wasn't sweet and was very brothy, so I'm hoping there weren't many carbs in it.

So, if we count five carbs in the beef and veggies, Quinn ended the day with 28 carbs and I ended with 21.

Not bad.

We're both on serious withdrawal though. Woke up with shakes and headaches and Quinn pretty much gave up on studying today, due to the lack of ability to concentrate. Yuck.

Looking forward to tomorrow...
