We had skillet-cooked steak, twice baked potatoes (or, depending on how you were raised, stuffed potato skins. But what's the dif?) and our favorite dinner side salad. The potatoes were sooo good. I prebaked them in the microwave, then gutted them into a bowl.
Added Colby Jack, Cream Cheese, Parmesan, chopped red onions, Fresh Bacon Bits, Pepper, Salt, Parsley, Butter and Milk. Mashed it (Mixed it, Mushed it...whatever you wanna call it) all together, Rolled the skins in melted butter and seasoned salt, filled them and stuck them in the oven at 400 degrees for 15 minutes.
The entire process took less than a half hour and they were soooo yummy! You really can throw anything you like into twice baked potatoes though, so don't be picky! I personally love them with cheddar and boiled broccoli. :D
